(A Mother’s Day Breakfast-In-Bed Suggestion)

What you are gaining from your breakfast, how is it fueling your brain and body for the day? How does this breakfast compare to your breakfast this weekend?

Some of the nutrients that a baked avocado and egg served with asparagus, onions, mushrooms, roast tomatoes, olive oil would provide are: omega 3, protein, choline, lycopene, prebiotic fibre, vitamin C, vitamin E, vitamin K, B vitamins, biotin, selenium, zinc, potassium.

With a breakfast like this you are on your way to your 5 serves of veg per day (keeping in mind that new research suggests 10 portions of vegetables/day is optimal!).

Recipe:

Ingredients – 1 Avocado, 2 eggs, salt & pepper to taste

Directions:

  • Pre-heat oven to 220.
  • Open avocado and remove stone.
  • Place on baking tray.
  • Scoop out a little bit of the avocado flesh so you have a deeper hole.
  • Crack an egg into each avocado hole, salt/pepper.
  • Place in oven and bake for about 15 – 20 minutes.
  • I served mine with asparagus, mushrooms, onion and of course kimchi!
  • Baby roasted tomatoes, melted cheese, sour dough toast would also be super good with this.
